Presentation of the project
The capstone project is a project organized by the University of Applied Sciences. The project is carried out in the following way: we are teams of 5 to 7 amazing people coming from different backgrounds (business, engineer, health), we must solve the problem of a company. We have one year to meet the company's needs, for that we are in contact with a product owner, who is a member of the company. The capstone project allows us to create opportunities with a new approach.
This year there are 34 different projects with more than 350 students.

Project Description for: UNICA DELI PHARMA BUSINESS DEVELOPMENT
Project background information :
Unica is a Turku-based company specialising in student catering. Unica is a company founded and owned by Universtas Oy (owned by the Student Union of the University of Turku) and Fazer Food Services Oy. Unica has a turnover of about 8 million euro and it employs over 70 people. See https://www.unica.fi/en/
The project is mainly focused on the Pharma City Unica restaurant. Pharma City DELI PHARMA Unica restaurant offers a wide range of services from food to selling alcohol beverages.
The context: Kupitta is transforming and a very dynamic enivronment: campus development, new buildings, more inhabitants, etc… For Pharma City Unica restaurant, the student segment represents about 50% while it generally accounts for 80% of the customer base in whole UNICA.

Project objectives:

Perform a service analysis (importance: HIGH): analyze in detail the elements of a catering service (key performance criteria).

Perform a customer segment analysis: perform a market study on the student segment (importance: VERY HIGH) for example finding out the drivers of students as a customer segment to go in Pharma City

Perform a competition and benchmark analysis (importance: VERY HIGH)

External competition: e.g. Mauno (which is perhaps not positioned on the student customer though)

Internal competition / cannibalism: UNICA LINUS (ICT), UNICA DENTAL. Explore the possible complementarities and synergies.

The implementation and organization of our project between was carried out in several stages
Step 1. Know and Organize our team
The first step was to meet my team, it is composed of 5 members: we are 4 business students and there is one engineering student. Then we wrote together some rules to follow to make the project go well. We must respect them.
We also had to create a whatsapp group to communicate, a microsoft team to exchange our documents. We have also created a trello schedule to get an overview of the tasks to be performed.
All these elements are very important in order to achieve an effective team management.
Regarding my particular responsibilities within the team, I am in charge of planning meetings on Tuesday and Friday with the coach. And to send him all the information, documents, links related to the project by email on time.
Step 2. Start to reflect on the project
We started the project as a group of 3 and then after a while we were all together. Before starting this project we did a little brainstorming to find out what we understood about the project and what it inspired us.
It was also important for each member of the group to research unica in order to fully understand the provider. We then collected several articles about Unica in a folder on Mircrosoft team.
Then we had a course on the Lean On start Up model, so our first mission was to make this model and to make a stalkholder maps. Here are the first versions of the models that will evolve according to the project :
We also met our coach for the first time and this allowed us to better understand the project. We have decided together to make an appointment with our project owner. So our mission was to reflect on question to ask to him during the meeting to be ready and forget nothing.
Step 3. Meeting with our product owner
We had the chance to meet our project owner, Julien boulanger, the manager of Unica delica. The meeting took place in two stages, first explaining his request, his problems, his clientele, his wishes, his expectations... This allowed us to identify the whole project and answer some of our questions.
The second part of the meeting was the visit of the premises: the student self, the cold buffet, we were able to see the premises to better understand the issues. He even gave us a satellite map of the site.

Step 4. Reflect about ideas
After this first meeting, we summarized the things we wanted to do first and the first ideas that came to us. The priority was to know more about the customer, who are them, their expectations, their opinion... Because they are the principal stakeholder of the company.
PRIORITY OF WORK TO DO:
1. WHAT WE WANT TO KNOW ABOUT UNICA CUSTOMERS?
- why they go to unica
-from what they are ready to pay more
What is the extra that Unica should offer to customers
- how to fill empty hours? like how unica gets customers to visit outside of lunch time
…
2. HOW WE FIND IT OUT FROM THEM

Then meeting after meeting, our ideas became more and more clear, the involvement of our coach allowed us to progress well. Here is the report of our meeting with our coach, following the meeting of our project owner :

Make an analysis of the frequentation of the restaurant during the day : with a graphic : simulation
Try to understand : frequentation of the day.
Work on hours of eating to limit rush-time : take away ??

In student segment what is possible to do for student :
Pay more by student to add something : extra sell :
Put one student of the team to try to sell more product to student like energy drink, or use application to attract more student.
Charging stations? TV for sports/other?

Work on poster to show the place more by customer, create new signage , add in kuppita for exemple.

Work on space : create hight table for people who haven’t too much time

Deposite : student will come back if they invest 0.25 more

Try to focus on green : people will pay more for green.
So you can see that new ideas have emerged, we have new avenues to explore and our future missions in mind.
The next step for me is to complete our stakeholder maps and with the team our lean on StartUp model and make the survey.
